Discover the magic behind one of baking’s most essential ingredients… eggs!

Join the Erie County Agricultural Society for a community agriculture class all about baking!

Ready to sharpen your skills and uncover the science and magic of the egg?

In this hands-on workshop, you’ll:

  • Bake a Lemon Meringue Pie while experimenting with egg whites, testing fresh vs. older eggs and learning how stabilizers like cream of tartar affect the whip.
  • Compare Classic Cornbread recipes using duck eggs and chicken eggs to see firsthand how egg type changes texture.
  • Master creamy Vanilla Pudding while practicing egg tempering and exploring how coagulation and binding create a perfect custard.

And of course, you’ll head home with all three delicious creations!

This interactive evening is led by Amy Barkley of Snowy Brook Farm, who brings years of experience in farming and baking.


About Amy:
Amy Barkley is the owner of Snowy Brook Farm in East Concord, NY. She and her husband, Zach work to bring a variety of farm products to their local community including pasture raised heritage laying hens, hatching eggs, chicks, and table eggs from chickens, ducks, geese, and guinea fowl. They also have a small apiary from which they produce raw honey and beeswax balms. Baked goods and small batch made jams are made by Amy and sold through their farm stand and other local markets.
